Dairy Free, Low Fat Chocolate Spread

Most delicious vegan chocolate spreads tend to be high in fat, while mostly composed of good fats, they are still heavy for daily consumption. That’s where this recipe comes in, it is light, healthy, dairy free and chocolaty.

Ingredients:

  • 1 cup cooked quinoa.

  • 250g dates.

  • 1/3 cup warm filtered water.

  • 2 tbsp cacao powder (add more for an additional kick).

  • 2 tbsp melted cacao butter or coconut oil.

  • Pinch of salt.

  • Optional: 1/4 cup peanuts or hazelnuts, soaked for at least 3 hours.

Preparation:

  • Before you get started, place the dates in the water and let them soak for at least 1 hour. I actually prefer to leave them to soak overnight, so that they become really soft and are easier to blend. In winter, the longer you soak dates the easier they are to blend smooth.

  • A tip for better results: the longer you cook the quinoa, the easier it will be to blend and will give you a smoother result.

  • If the butter/oil are solid you will need to melt them first, by placing the butter/oil container in hot water for a few minutes.

  • If you are using the optional nuts make sure you rinse them well.

  • In a strong blender or a food processor, combine all ingredients and blend for 1 to 2 minutes until you get a smooth consistency.
